Copy & Paste with Ctrl+C/V doesn't work;
also both commands are not visible nor customizeable 
in the tools::options::keymap-window;

What build are you using? Is it Nb6.1 RC2? I tried this in a dev build and the actions seem to work fine. However, they
really don't seem to be listed in Tools-Options -> Keymap. This is a second complaint of this type I've seen recently.
The first one was issue #133170 complaining about missing 'Delete Next Character'.

right; I'm using 6.1 RC2;

to be more precise:

I switched the Profiles [Eclipse, Emacs, etc] and pushed the "Restore"-Button several times,
and somehow suddenly the shortcuts Ctrl+C/V appeared in the menu behind the respective Edit-commands
and pressing those Buttons had the desired effect 
[ which both wasn't the case before ];

nevertheless, they are still missing in the list Tools::Options::Keymap,
like several other commands do as well;
for example: Edit::Undo/Redo

for my allday's work as a workaround I modify/add the entries in 
~\Profile\~\.netbeans\6.1rc2\config\Keymaps\

I think this is the same problem as in issue #133618.
