If press Ctrl + Z or Ctrl + Y in Find/Replace Dialog then changes will apply for editor but not for text in dialog's fields. In last version it worked correct. I guess the problem connected with using of the same action that for editor. I tried nb 6.9.1 and it doesn't work. I didn't see any implementation in old source to allow undo/redo. You can use arrows and chose search term from combobox.
It worked correctly in NB 6.7 (Find Dialog). Never the less my opinion is I have to able to manage in Find/Replace Dialog by keyboard (hotkeys) without mouse, and if cursor located in the dialog then all actions have to be applied to the dialog's content.
I installed 6.7.1 and ctrl+z, ctrl+y will not change text in find combobox (dialog's fields). You can still use arrows on keyboard.
