This is common error, I was able to reproduce it on Windows and Mac (see addition screenshots). For increasing probability of reproducing try:
1. Close all tabs in editor (it's important!)
2. Right click any java class and in pop-up menu navigate to refactor > Introduce...
>> In most cases shortcut label is presented only for: Parameter, Local extension...
You may also try to invoke Refactor > Introduce... fro diferent place: Project Vie, main menu, editor
