When I try to add entity beans, in Netbeans 7.3, it always freezes right here. I don't know if it's a setting, the wizard itself (ie - it can only hold soo much info - it's a size issue), it's our db...

This is a duplicate of bug 227678. 
Please see the comments there. It would be great if you could provide some additional info.
The data source name is the same as in bug 227678. Are you working on the same project?
